Check out from the olden days: Basically a roll of paper with holes with trigger information for when and how long the piano hammers should hit the strings. In many ways it's the same with MIDI and instruments in Reaper now. There's just added lanes with data to control knobs etc (MIDI Control Changes (or CC for short)).
